Nicole Jenkins
Manager, Beef & Poultry Sector, Environmental Defense Fund
Nicole Jenkins is a Project Manager and the US Beef Sector lead with Environmental Defense Fund’s Business team. She leverages EDF’s economic, scientific, and political expertise to collaborate with and provide support to food companies in driving critical climate action in animal agriculture, particularly the beef and poultry sectors. Nicole has an M.S. in Agriculture, Food, and Environment from the Tufts University Friedman School and a background in environmental non-profit and food sector consulting work intent on creating more holistically sustainable supply chains.
